A pastry chef at the course already very impressive

Louis Dubois began as a pastry at the Ritz, the famous Parisian palace, before working at Fauchon place de la Madeleine still in the french capital. He was then pastry chef at the Sketch in London, Pierre Gagnaire's restaurant.

Choice ingredients for ice cream, pies and cakes

Pastries and ice cream are sold to both individuals and professionals. The choice of ingredients used guarantees quality pastries. The lemon, for example, comes from the Gaude or Nice, the pistachio from Iran, the vanilla from Madagascar. The chocolate comes from Michel Cluzel etc ... Everything here is made without coloring, artificial aroma and with the least sugar possible. The menu changes regularly according to seasonal products and the desires of the chef: Lemon meringue, millefeuille vanilla Madagascar, rum Baba, Strawberry, Paris Brest etc.

The ice cream is eaten on the spot or to be carried away with cones made by the house. Sorbets contain 70% fruit, a proportion that is rare enough to note.

Very enthusiastic, Louis Dubois and his companion Aurore, are struggling to revitalize the establishment that regularly goes out of the walls with its old-fashioned ice carts for all kinds of private or public events: birthdays, municipal holidays (Feast of the rose at Colle Sur Loup, strawberry Carros), corporate receptions etc...
Waffle and homemade chocolate as well as delicious fluted will make an excellent taste on the spot. About twenty seats, placed on the square in front of the pastry will participate, very soon, to the success of this very promising establishment.
